Vitamin K

Vitamin K

Vitamin K was discovered in 1929 by Danish researcher Henrik Dam.  He named it after finding it prevented chickens on a fat-free diet from bleeding out.  He called it the "koagulation" vitamin using the German spelling.

The body needs Vitamin K to produce prothrombin, which is a protein and blood clotting agent.  It is important in blood clotting and bone metabolism. Vitamin K1 or phylloquinone comes from plants, such as kale, when it is eaten, bacteria in the large intestine converts it to it's storage form of vitamin k2.  It is then stored in the small intestine to be used (combined with Vitamin D)when needed for bone health and blood clotting.

Vitamin K may help keep blood pressure lower by mineralization, where minerals build up in the arteries.  This enables the heart to pump blood more freely.

The RDA is only 70-90 micrograms per day.  1 cup of raw chopped kale is 472 mcg!, so it very easy to be getting enough K.  By eating a balanced healthy diet you will get enough.

What a mug...
Mochi says it's reading time!
There is no better way to occupy your down time then by reading.  Instead of mindless scrolling through Facebook, Twitter and Instagram etc. read a book.  Exercise your mind, gain knowledge, learn something new and travel the world without leaving your couch.  Just remember to get up and move!  There has to be a balance.

Let's get started with the environment:
What's up Facebook? when will it end? Abandoning drilling equipment?
In my field of work we utilize Lidar, travel to Honduras with Chris Fischer on the importance of why we should Lidar the whole Earth.
This is an image of Lidar scan of 500kv transmission line showing trees and brush which might impede power distribution.

It's April Recommended Reading time.

With most people staying at home now, there is plenty of time to spend time with family. to be creative, catch up on reading and exercise.  Hopefully you will be able to continue working while at home.  Please make time for yourself and take care to keep up with your mental, physical and spiritual habits.  Also, don't get caught up eating a crapload of processed junk food.  Eating a healthy, whole foods plant-based diet will keep your immune system strong, which is even more critical now.  One thing I have noticed, is with this crisis, people have been connecting to their creativity and kindness for one another.  Let's not forget that when we get back to the "new"normal.

Let's get started:
WELLNESS
I know the media is bombarding us with Coronavirus information, but this from Food Revolution is useful info on overall wellness, Staying Healthy
Here are 7 Tips on Staying Healthy from Spartan Life.  Also from Spartan Life: Your Guide to Eating Smart and Healthy when you're stuck at home.
How to Boost Your Immunity During Coronavirus Outbreak from FoodmattersTV. FMTV is like Netflix but all about total wellness, food, yoga, meditation etc. Check it out!

FOOD/RECIPES
Here in Florida we are blessed with a year-long growing season.  With everyone needing to practice social distancing the local farmers are having their own drive up farmers markets and some plant-based restaurants are having "virtual" farmers markets where you can order many different types of produce, local coffees, honey and even prepared foods weekly and then a curbside pick up!
To keep a healthy immune system you need a healthy gut biome.  Fermented foods are one of the best ways to do this.  Here is a very easy recipe for Beetroot Sauerkraut
Roasted radishes will become your new favorite veggie with this flavorful recipe.
Roasted Veggies:
We take a variety of cubed root veggies like potatoes, onions, heirloom carrots, zucchini and squash. Mix with a few tablespoons of olive oil, salt and pepper in a large bowl.
Roast in oven at 450' until potatoes are tender(40-45 min)
Serve on a bed of prepared whole grain or rice spaghetti noodles which has been "fried" in an oiled skillet until it is a little crispy.
For the sweet tooth in us, try these Jammin' Almond Thumbprint Cookies

Words of Wisdom

It is hard to fathom that 2018 is upon us.  I can remember when I graduated from high school in 1975, that the mere thought of the 21st century was mind blowing.  Living like the Jetsons (for those to young to know who they are), was only wishful thinking.  But most of those conveniences are common place now.  We hold the access to most any knowledge in the palm of our hands.  We can connect with anyone in anyplace in the world in seconds.  Sometimes this power can be overwhelming and we take for granted the power and love of face-to-face communication.  Sometimes just turn off or put down your phones, tablets or laptops and have a real conversation, laugh or a meal with those you love.

I love inspirational or motivational quotes and sayings.  We have a chalkboard in our kitchen that I will usually put a new quote on every week. It might be something that pertains to what we are dealing with that week.  Or it might just be words of motivation for the coming week.

Here are some that I'd like to share.  They are not in any particular order. You might recognize some of the authors and others will be new.
Words of Wisdom

*Compassion leads to understanding.  Accept and be kind to yourself and those around you.
*Love is not what you say, but what you do.
*Make gratitude a habit. Simply say thank you in any given moment.
*"We make a living by what we get, we make a life by what we give" Winston Churchill

*Boldness calls on your willingness to let go of what you have in order to create something you dream of.
*Its not about what happens, its about your reaction to what happens that matters.
*"Your worst enemy cannot harm you as much as your own unguarded thoughts." Buddha
*Its not about being perfect, its about being the best you at the moment.  Allow yourself to listen inwardly, pause to hear your own wisdom.

*"Learning never exhausts the mind" Leonardo da Vinci
*"The general who wins the battle makes many calculations in his temple before the battle is fought. The general who loses makes but few calculations beforehand" Sun Tzu
