 It's been almost a year since my last recommended reading post!  It's amazing how times passes by so fast. We should definitely enjoy and be present in each moment.

For breakfast try these 4-ingredient Banana oatmeal Nut Butter "Cookies"

This recipe is from the new "Blue Zones Kitchen" cookbook,

Tomato Pasta Soup

4 cups water

2 cups veg broth

1 15oz can diced or chopped fire-roasted tomatoes

1 cup tomato sauce

2 tbs olive oil

1lb orzo pasta

1 tsp salt

In a large soup pot bring water and broth to boil.

Add tomato sauce, olive oil, orzo and salt, stir to combine.

Reduce heat to low and bring to simmer for approximately 20 minutes. stir so orzo doesn't stick to the bottom.

Enjoy with warmed baguette!

Natural Allergy Relief

Spring is here! Along with new growth comes the dreaded allergies. Most over the counter relief comes with help but makes you drowsy. There is a better alternative with Stinging Nettle  You can find it growing in the wild (don't consume when flowering) or much easier is at a health store or online. Amazon has many to choose from, but always buy organic please.

Natural Allergy Relief

Anyone who has been hiking before or even working in the garden has probably encountered "stinging nettle".  You never forget the stinging pain on your leg or hands that comes with brushing up against this wonderful weed.  But the natural benefits outweigh the sting of Nettle.  The first recorded use of it was by Roman soldiers battling the harsh cold by rubbing leaves on their arms to induce inflammation just to warm their skin!  Its leaves have long stinging hairs that inject chemicals into the skin of unlucky persons or animals who cross its path.  It is its natural defense mechanism.


Some of the great benefits when consuming nettle are:
*Helps to detox the body, it is a natural diuretic, flushing out harmful chemicals and 
excess liquids. especially useful in urinary tract infections.
*Promotes healthy blood circulation and cardiovascular health, with high amounts of
iron and vitamin c its helps to alleviate anemia and fatigue.  Also with high amounts of potassium it lowers your risk of strokes and heart attacks.
*Reduces arthritis pain, the antioxidant properties minimize the swelling related with arthritis and used topically can relieve some pain also.  
*Alleviates allergic reactions, even though the physical contact of nettle causes inflammation, the ingestion of it does the opposite by dampening the body's response to allergens.  It binds with the body's histamine receptors to lessen the effects of allergy symptoms. 

One of the most effective ways to consume Nettle is drinking a tea blend of  nettle, peppermint tea  and honey.  Nettle by itself has a very strong earthy taste, the honey and peppermint smooth it out a little.  You can find a variety of different brands to purchase online or at your local health food store,  Some even sell it in bulk so you can make your blend.
Making Nettle Leaf Tea Using Dried Nettles
  • Place about two teaspoons of dried nettle leaves in a tea strainer and place the strainer in a mug.
  • Pour in boiling water, cover, and let it steep for 10 to 15 minutes.
  • Add honey or sweetener of choice, stir to dissolve.
  • Strain out and discard leaves.
  • Sip and enjoy!

The next time you have the sniffles from pollen, brew  a cup of Nettle tea!  During heavy allergy season drink it daily you will definitely see a difference.  
It is always better to find a natural remedy from nature than bombarding your immune system with a man-made alternative.

Vegan Turkey Bacon Club Sandwich


This is a tasty and easy sandwich to make. You will have to make some Coconut Bacon ahead of time though.  We use an extra firm tofu and Field Roast Chao Cheese and Goya Adobo All purpose Seasoning both available at Walmart, etc.

To make a couple of sandwiches:

In a small amount oil fry 1/4" slices of extra firm tofu, seasoning with the Adobo seasoning and sprinkle with dried thyme (for the turkey flavor). Toast your choice bread. Using vegan mayo, sliced tomatoes, coconut bacon and a slice of Chao cheese topped with some Romaine lettuce, you have created a double deck yummy vegan Club sandwich!

Enjoy!

Here's another quick easy meal:

Tofu Ramen

Crumble extra firm tofu into large chunks and fry in a small amount oil, seasoning with Adobo seasoning.

we use Momofuku Soy and Scallion Noodles, prep the noodles(appr 4-5 minutes) while cooking the tofu.

When tofu is browned (4-5 minutes) use Kinder's Teriyaki Glaze and cover the tofu to taste.

Combine in a medium bowl and enjoy!

Easy Cold Brew Coffee and Snickerdoodle Protein Balls 

Here's an easy and inexpensive way to make your own cold brew coffee;

Using your favorite coarse ground bean,  add 1/4 cup to a large "Mason Jar".

Fill with filtered water, stir a few times and place in the refrigerator.  12-18 hours later, your ready to drain through a screen or coffee filter into a clean glass container. Simple.  Mix to your desired richness with water, non-dairy milk or drink it straight!

You can add another 1/8 cup of ground and start over for your next batch.

For a Snickerdoodle treat:

In a large mixing bowl mix:

1-1/2 cup of almond flour(GF) or general purpose flour

1/4 cup vanilla plant-based protein powder

1 tsp cinnamon

1/4 cup almond butter(or any nut butter)

1/4 cup maple syrup

2 tbs non-dairy milk (or water)

In a separate bowl mix 1 tbs of each, cinnamon and sugar for rolling.

Once well mixed, portion approximately 1-1/2 tbs mixture into a ball.

Roll each ball in the cinnamon/sugar mixture and place in the freezer to set.

You can store them in the refrigerator for up to 2 weeks( not likely they will last that long!

 Let's do fika!



According to many worldwide studies Sweden is one of the happiest countries to live. Fika, the delightful custom of enjoying a coffee and a treat with friends is as Swedish as ABBA. 

Surely it's just a coffee break?  Fika is much more than that, to Swedes, fika is something of a ritual. It typically consists of coffee and a sweet treat shared with friends on a regular basis.  It is a deliberate way to share a social connection with friends and colleagues during work times.  More importantly, a way to enjoy time with those you love and just connect, especially in nature.  Our daughter Briana spent time in Sweden and recently came back with fika as a daily ritual. Kristen and I have made it a weekly connection to spend quality time together.  That is what fika is all about.

Quick and Easy

Quick and Easy

Here are two easy recipes:

Pickled Red Onions

This simple recipe comes from Earthy Andy.

 Red onions promote healthy digestion, fight inflammation, boosts your immune system and tastes delicious!

1 large red onion sliced very thin

1 cup apple cider vinegar

2 tbs sugar

1 tbs salt

2 cups water

In a small bowl mix ingredients and bring to a simmer.

Load up a medium Mason jar with the sliced onions; pack it in!

Pour liquid mix over the onions and let rest.

They're ready to eat now, but better if left a few days to absorb the flavor.



English Crumpet Pizza

We use Trader Joes English Crumpets for the base, but any English Muffin will work.

Place your "crumpets" on a baking sheet.

Layer on  pizza sauce or pesto sauce of your choice.

I use Vegan Kale Cashew Basil Pesto or Pizza Sauce, both available at Trader Joe's.

Top with your choice of cheese.

I use Dairy free Cashew Mozzarella Style Shreds from Trader Joe's.

Top with a sliced red bell pepper or topping of your choice.

Bake at 350' for 12-15 minutes.

Top with fresh basil.

I just realized this whole recipe came from Trader Joe's!

2 Awesome Muffin Recipes

Everyone Loves Pizza

 I don't think I have ever heard of someone that doesn't love pizza.

That being said, going plant-based you choose to go dairy-free..."I can't quit the cheese!" Finding a plant-based cheese that actually melts reasonably well is hard to find.

Trader Joe's "Dairy free Mozzarella Style Shred" made with Cashews is the answer.





This simple Mini Pizza Muffins recipe comes from Weight Watchers but with a little twist.

1 lb pre-made pizza dough (Trader Joe's)

3/4 cup pizza sauce (Trader Joe's)

1 cup Dairy free Mozzarella Shreds (Trader Joe's)

Preheat oven 450'

Divide the dough into 12 equal pieces and press into a silicone muffin pan, pressing down the middle. Slightly brush dough with olive oil/garlic powder.

Add 1 tb sauce, 1-1/2 tb "cheese"

Bake for approximately 15 minutes, then let cool and enjoy!

Just Bananas Muffins

This recipe comes from Forks Over Knives and Chef AJ

Oats, bananas and applesauce are the base ingredients.

These make an easy breakfast along with a bowl of berries etc.

No dairy, no sugar, no flour, no oil and no salt!

4 very ripe bananas

2 cups oats, ground into flour

1/2 cup unsweetened organic apple juice

1/2 cup unsweetened organic applesauce

2tb ground flax seeds

1tsp gr cinnamon

1/2tb vanilla extract

1/2tb apple cider vinegar

1/2tb baking powder

1/2tsp baking soda

Preheat oven to 350'

Grind oats into flour and add all other dry ingredients into a large mixing bowl.

Puree or mash bananas until smooth.

Add the apple juice, apple sauce, extract and cider vinegar to banana puree until combined.

Pour over dry ingredients until combined.

Optional- Add 1/2 cup frozen blueberries

Pour into silicone muffin pan until 3/4 full.

Bake for 20-25 minutes(28-30 minutes if added blueberries)

Enjoy!

Cashew Milk Coffee Cream

 Cashew Milk Coffee Creamer

Try this plant-based coffee creamer for a creamy alternative to store bought dairy creamer.

Homemade Cashew Milk Recipe

Ingredients:

  • 1 cup raw organic cashews (soaked overnight)
  • 4 cups filtered water
  • 2-3 Medjool dates (pitted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

Method:

  1. Soak cashews for 7 to 12 hours. Filtered water is preferable.
  2. Drain and rinse soaked nuts.
  3. Blend all the ingredients in a blender or juicer for 30 seconds to 1 minute until the milk is smooth and creamy.

  4. Enjoy!

Change up your grain intake with a Inca Quinoa Salad.

Today we are having simple "Blackened Tofu Sandwiches"

Press and slice Tofu, melt vegan butter in a skillet over medium heat.  Coat the tofu with "blackened seasoning" cook until blackened on both sides. Serve on bread of your choice with tomatoes, spinach, avocado etc. Easy seasoning mix of: paprika, onion powder, thyme, oregano, cayenne pepper, salt and black pepper.

Soy Curl Chick'n Salad Sandwich



 

Soy Curl Chick'n Salad Sandwich

This has to be the best vegan version of chicken salad that I have had. Some recipes use chickpeas like our Cowabunga sandwich. This one tops them all!

4oz Soy Curls

2 Organic celery stalks

2 tbs fresh or dried Dill

2-3 diced Dill pickles

2 tsp Dijon mustard

1/4 cup vegan mayo

Black pepper

Salt

Rehydrate the curls in water for 10 minutes, then squeeze out excess water the best you can.

Pulse the Soy Curls in a food processer.

Mix all other ingredients in medium.

 


In medium skillet, sauté' soy curls in 2 tbs olive oil.

Adding 2 tbs. onion powder.

1 tsp. fresh or dried thyme.

1 tsp. celery salt.

1 tsp. Italian seasoning.

1/2 tbs. turmeric.

1 tbs. Nutritional yeast.

When browned add all ingredients into medium bowl.

Serve on whole grain bread or sub roll with sliced tomatoes or 

Avocado Mango Salsa

1 ripe mango

1 ripe Hass avocado

1/2 diced small onion

1/2 tsp. Coriander 

Mix all together to make a delicious salsa

This post is a little different than most.  I hope it speaks to you and lifts you up.  If you're having a rough day, I hope you know that you are loved and you matter. 

 Our world is changing.  Oftentimes it seems as though friends, family and strangers are treating each other with less and less compassion and understanding.  If others don't share the same beliefs, they are wrong.  I heard a podcast recently with Guru Singh talking with Rich Roll.  He made a very enlightening statement:  The way of educating children needs some changes.  Instead of (or in addition to) the 3 R's, what should be taught is the 3 C's: Compassion, Collaboration and Communication.  This way children will learn how to deal with the real problems of our time.  By learning how to be compassionate towards others and  collaborate and work in unity with one another, there will be less conflict.  When these children become adults, they in turn will teach their children and the world will be a better place in which to live.  Eventually the cycle will stop and adults will live a more harmonious life with others, and our differences will be cause for celebration and not contention.

This week, let's all try to be more compassionate towards our loved ones.  Be kind to strangers!  Your kind words might be the healing words they need to hear.

This week, let's communicate with each other.  Be honest.  Be uplifting; encouraging words have life. Let your loved ones know what's in your heart.  Life is too short; it could end tomorrow.  Let your love flow out of you.

This week, work as a team; collaborate with one another.
A three strand rope is stronger than a thread!

Vitamin K

Vitamin K

Vitamin K was discovered in 1929 by Danish researcher Henrik Dam.  He named it after finding it prevented chickens on a fat-free diet from bleeding out.  He called it the "koagulation" vitamin using the German spelling. 

The body needs Vitamin K to produce prothrombin, which is a protein and blood clotting agent.  It is important in blood clotting and bone metabolism. Vitamin K1 or phylloquinone comes from plants, such as kale, when it is eaten, bacteria in the large intestine converts it to it's storage form of vitamin k2.  It is then stored in the small intestine to be used (combined with Vitamin D)when needed for bone health and blood clotting.

Vitamin K may help keep blood pressure lower by mineralization, where minerals build up in the arteries.  This enables the heart to pump blood more freely.

The RDA is only 70-90 micrograms per day.  1 cup of raw chopped kale is 472 mcg!, so it very easy to be getting enough K.  By eating a balanced healthy diet you will get enough.

Vitamin E


 Vitamin E

Vitamin E is an antioxidant and may help your cells from damage. Also, being it is fat-soluble, your body stores and uses it as needed.  Like rust on your bike or automobile, a similar process of oxidation and accelerated aging takes place in our bodies when we are exposed to free radicals.  Free radicals weaken and break down healthy cells, contributing to heart disease and cancers.  Free radicals form as a result of normal body processes, but more so with exposure to industrial chemicals, pollution, cigarette smoking, etc.  Vitamin E helps in reducing the damage and slowing the aging process down.

It has been shown in many studies that high doses of Vitamin E supplements actually DECREASE life span.  The NIH, reports that taking high doses of Vitamin E in supplement form can cause serious side effects. Including increased risks of hemorrhagic stroke.  

The following foods are good sources:

1 ounce serving:

*Dry roasted sunflower seeds = 7.4mg

*Dry roasted almonds = 6.8mg

*Dry roasted hazelnuts = 4.3mg

*Dry roasted peanuts = 2.2mg

1 cup serving:

*Spinach boiled = 1.9mg

*Broccoli chopped and boiled = 1.2mg

The easiest way to get your RDA (15mg) is by adding a tablespoon of wheat germ oil to a recipe or alternatively snacking on sunflower seeds throughout the day.  Or even a kale/spinach salad with tomato, sunflower seeds sprinkle with wheat germ.  Get creative!

Recommended Reading 03/07/21




 Over the past year our son, Jay Bird, "The Bird Nerd" ( I say that lovingly) has been utilizing an app by The Audubon Society to spend time outdoors and learning about the native birds in his area. Kris and I downloaded this app yesterday and already have been using it.  It is an easy way to get outdoors and enjoy nature and an awesome learning tool.
